What's for Dinner? Crock Pot Roast Pork

Now that school is back in, I plan one or two slow-cooked meals each week. When I create our meal list, my mind blanks. I can think of one recipe, tops. Well, I'm not making the same Crock Pot meal every week! But what to make? My recipes use only a few ingredients and are simple to prepare.


Today's dinner is Crock Pot Roast Pork with carrots, onions, and potatoes.

Unlike good chefs, I do not brown my meat before popping that bad boy in the slow cooker. Nope, I toss a bag of baby carrots into the Crock Pot, chop an onion and throw that in too. Sometimes I peel and slice potatoes and add them to the mix. Then I shake salt and pepper over the raw roast, place it over the veggies, add 1/2 to 3/4 cup of water and a chicken bouillon cube, cover it, set the heat to low, and walk away for 8-10 hours. 

It's beautiful. A fully-cooked meal awaits us that night. The meat falls apart--so tender and delicious. I use a slotted spoon to transfer the vegetables to a bowl. Often I make a quick gravy with the juice, just depends on how I feel.

Other slow-cooked meals I adore? Chili (which takes a little more time to prepare since I do brown the meat!), chicken thighs, roast beef, pulled pork, sloppy joes, turkey breast, and saucy pork chops.

  1. Since we're having problems with the wiring and the kitchen light circuit has been disabled, I'm making pot roast with carrots and potatoes. I don't brown the roast either. That's just another dirty pan to wash.

    1. Right on, CJ--another dirty pan to wash. Who needs that?? I'm sorry you're having electrical issues though. :( Those tend to cost money to fix.

  2. Hi, Jill! I adore crockpot recipes; just made one for a shredded chicken that you can serve on buns (like a traditional pulled pork sandwich), though we had it over rice last night. It's been really hot around here; too hot even to grill outside, so the crockpot was perfect! And of course in the winter it's terrific, too, because it's ideal for making the soups and stews we all crave that time of year. Will definitely bookmark your recipe!

    1. Our church ladies served pulled chicken at a funeral a few years back--boy, it was delicious! Great idea! And it's funny, but I bookmarked your beef Crock Pot recipe a while back!!

  3. One of my favorite meals is Cajun spiced broiled (boneless, skinless) chicken breasts. I need to get in the habit of using my slow cooker. Thanks for the reminder.

  4. I used to love the crock pot, but I'm having difficulty finding vegetarian recipes that a) don't fall apart in the crock pot, b) actually taste good, and c) the kids will eat. At the moment, I am trying to plan a few weeks of meals and can find zero options! I really miss pot roast days. :)

    1. No doubt! I'm picky about the crock pot. I only cook things like chili or bone-in meats. Everything else turns to mush or dries out. Maybe a better option for you would be to double a recipe and freeze half? I do that with several recipes. it's nice to know I have a yummy meal waiting to be thawed out!
